Before fancy computers, animation and green screens, television was raw! Most the car jumping scenes in the show were 100% real and fresh with very little stock footage every being used. That means each time a car jumping scene happened it was only done once.

Steel boxes were welded in the back of each General Lee, usually up to 400 pounds as it helped produce better jumps. The bigger and higher the jump, the more weight was needed to balance the car.
